Did you know there is an inexpensive product in a simple yellow box in your kitchen that has many uses in your home including food preparation, cleaning and even easing minor health problems?

This multi-purpose product is sodium bicarbonate, better known as baking soda.

It is best known for its use in baking. When baking soda is exposed to acids, like buttermilk, yogurt, vinegar, sour cream, molasses or citrus juice, it produces carbon dioxide gas that adds a lift to your baking product. This reaction is short-lived so it is important to get the cupcakes or muffins in the oven quickly. Baking soda also enhances the browning of baked goods and helps foods like cookies or pancakes to spread out to keep them soft and chewy.

Baking soda and baking powder can sometimes be confused as the same thing. They both add volume to baked goods but they are not the same and cannot be substituted for each other. Baking powder is made up of baking soda and a powdered acid, like cream of tartar. When moisture is added to baking powder, the same chemical reaction occurs without the need to have a separate acidic ingredient. Many recipes may call for both baking powder and baking soda because they have different purposes in the end product.

In addition to its use in baking, this simple product has many other uses in the kitchen as well as other parts of the house. One of the most well-known uses for baking soda is to control or eliminate odors. It neutralizes bad smells in your refrigerator, garbage can, carpet, dishwasher and garbage disposal due to its alkaline pH level.

Baking soda is also great at removing grease, scum, grime and stains. Make a thick paste of baking soda and a small amount of water, and use it to clean handles, faucets and other grimy areas. You may need a stiff brush to scrub well. Rinse off with warm water immediately or let it dry and rinse later.

To remove stains in coffee mugs and teacups, sprinkle the inside of the container with baking soda and gently scrub with a moist cloth to remove the stain. Then rinse thoroughly.

To remove burnt food from stainless steel cookware, sprinkle the bottom of the pan generously with baking soda and add water to cover the scorched area. Bring to a boil and then empty the pan. Use a sturdy scrubbing pad to remove the leftover remains.

Baking soda is a natural ingredient for environmentally friendly cleaners. Dissolve one teaspoon of baking soda in one quart of warm water for a great refrigerator cleaner. Try making a paste by mixing baking soda with an equal amount of lemon juice and a bit of water. Apply the paste to kitchen surfaces with a sponge or cloth and scrub thoroughly. Then rinse well.

There are many other uses for baking soda throughout your house. Be sure to store baking soda in an airtight container in a cool, dry place.
